Chili Con Carne
Preparation time: 75-90 minutes (including 40 minutes' waiting) Ingredients 1 large onion 1 red bell pepper 2 cloves garlic 1 C.S. oil 1 heaping C.C. cayenne pepper 1 C.C. paprika 1 C.C. ground cumin 500g ground beef 1 beef bouillon cube 400g can peeled tomatoes 1/2 C.C. dried marjoram 1 C.C. sugar or 1 thumbnail dark chocolate 2 C.S. tomato paste 400g red beans white rice, to serve sour cream, to serve ———————————————————————————————————————— Initial preparation: Chop onion, bell pepper and garlic into small dice. Heat large frying pan on medium heat with 1 C.S. of oil. Once the pan is hot, add the onion. Cook for about 5 minutes, until the onion is soft and slightly translucent. Add the garlic, red pepper, cayenne pepper, paprika and cumin and stir well. Cook for 5 minutes, stirring occasionally. Turn up the heat up a bit and add the meat. The mix should sizzle a bit when you add the meat. Keep stirring and breaking up the meat for at least 5 minutes, until there are no more pink bits. Heat enough for the meat to fry and become brown, rather than just stew. Crumble bouillon cube into 300ml hot water (1 medium coffee cup) and add to the rest. Add the peeled tomatoes, marjoram, sugar or chocolate, and a good shake of salt and pepper. Squirt in about 2 C.S. tomato purée and stir well. Bring the whole thing to the boil, give it a good stir and put a lid on the pan. Turn down the heat until it is gently bubbling. Drain and rinse the red beans. · · · 20 minute pause · · · Stir the red beans into the sauce. Bring to the boil again, and gently bubble without the lid. · · · 10 minute pause · · · Taste a bit of the chilli and season. It will probably take a lot more seasoning than you think.
