Tomato Sauce

• 3x 400g cans of peeled tomatoes (or 2x 800g) • 2 tsp cassonade sugar • 2 tsp oregano • 1 tsp salt • 1 tsp basil • 1 tsp thyme • 2 bay leaves • 1 medium-large onion • 3 frozen hamburger patties (optional) Cook the tomatoes and dried ingredients for 90 minutes, stirring regularly Cut the onions into fine strips and cook at low heat until brown and transparent. If you're doing it correctly, other people will come into the kitchen and say "mmm that smells good, what are you cooking?" and you'll answer "it's just onions." If you're going to make a bolonaise, then soake the frozen hamburger patties in hot tap water until they thaw. · · · When it's time to eat, add the onions to the tomato sauce, remove the bay leaves, and add the hamburger if necessary.
